Here's an example:
SELECT * FROM pubs WHERE name LIKE "%John's%"
Just use double quotes to enclose the single quote.
If you insist in using single quotes (and the need to escape the character):
SELECT * FROM pubs WHERE name LIKE '%John\'s%'...
